Preheat the oven to 350°F. Line a baking sheet with parchment paper, or grease with coconut oil and dust with tigernut flour.
In a large mixing bowl, combine the coconut butter, maple syrup, matcha powder, and vanilla extract; mix with an electric mixer or spoon until well combined. Add the tigernut flour and mix until smooth.
Use a cookie scoop or a spoon to drop tablespoonfuls of dough onto theprepared baking sheet, or form tablespoon-sized balls of dough with your hands and place on the baking sheet, spacing them 2 inches apart.
Bake for 15 minutes, or until lightly browned. Remove from the oven and let cool on the baking sheet for 5 minutes, or until set enough to move. Transfer the cookies to a cooling rack and let them cool completely, about 10 more minutes.
